How to make American style fluffy pancakes for Pancake Day

Pancake Day 2020 is 25th February!

For Pancake Day this year, try these super easy, fluffy US-style pancakes for a change. The advantage of these American pancakes is that they are smaller than the usual, equally delicious European pancakes, so easier for small hands and tummies. Serve with maple syrup and blueberries, raspberries and icing sugar or any of your favourite toppings.

This recipe is so simple and quick that even fairly young children will be able to make these pancakes. Children love picking out their own toppings.

Ingredients

200g self-raising flour
1 tsp baking powder
1 tbsp caster sugar
3 large eggs
25g melted butter
200ml milk
1 tsp of vegetable oil for cooking

Method (so easy)

Mix all the dry ingredients in a large bowl.
Whisk all the wet ingredients (except oil) in another bowl.
Tip the wet ingredients into the dry ingredients and whisk together.
Heat a non-stick frying pan and add the oil.
Add 1 tablespoon of the mixture into the pan.
Cook for a minute or two until the top starts to bubble.
Flip and cook other side.
Quick, easy, yummy!
