Tasty Oat and Banana Pancakes
These pancakes are really tasty but just happen to also be healthy plus gluten and dairy free! Perfect if you have a child who can’t have wheat or lactose but doesn’t want to miss out on pancake day! These simple pancakes are suitable for vegans as well. And they’re so yummy that everyone else in the family will love them too.
The recipe is very easy and takes about 10 mins. They keep very well in the fridge so you could make these pancakes the day before for a quick & healthy breakfast.
150ml almond milk*
1 tsp gluten-free baking powder
pinch of salt
½ tsp ground cinnamon
1 tsp pure vanilla extract
1 tsp sunflower oil
maple syrup to serve
Grind the oats in a food processor to make flour. Mix with the baking powder, salt & cinnamon.
In a blender or food processor, blend the banana almond milk and vanilla. Stir into the flour mixture.
Heat the oil in a frying pan and tip in a ladleful of the pancake mixture. Cook on a medium heat till golden underneath then flip over and cook for a further minute. These are thicker than normal pancakes so work best if they’re not too big.
Drizzle with maple syrup. Yum, yum!
Serve with handful of berries for a treat!
*You can use normal cow’s milk and plain flour if you prefer and don’t have allergies.
